Why is it the best? Because the trees get no chemical fertiliser: green manure is the only feed. We prune little, and the olives come out small.

Our story

In 1985 the frost burnt the olive trees. Natale refused to uproot them.

Everyone else cut down and replanted. He waited for the roots to send up new shoots. Forty years on, those same trees still give his oil.

Today Giacomo and the family look after them, one by one.

Deep green, fresh grass and artichoke.

Olives picked small and by hand from late September. The yield is low, between 7 and 9.5 per cent. In return, a delicate, round oil with a gentle pepperiness and acidity below 0.01.
